Roasted Garlic Tortilla Chips
Here's a cool way to use left over tortillas in case you don't want to make another taco or quesadilla. The flavor of the oil and garlic infused together brings a twist to the classic tortilla chip. A little Italian twist. These are baked, too. I wanted to add some parmesan, but I didn't have any on hand.
If you just want the regular salted version just coat the tortilla wedge with some olive oil and sprinkle some salt over them.
Roasted Garlic Tortilla Chips
4 taco sized tortillas (Cut into wedges)
3 Large garlic cloves (minced)
3 Tbsp Olive Oil
Dry Parsley
Salt
Grated Parmesan Cheese (optional)
Preheat oven 350˚F
Mix together the olive oil, garlic, parsley and a pinch of salt. Let it stand for 5-10min to let the flavors fuse.
Then lightly coat both sides wedges with garlic mix and place on a baking sheet.
Bake for 10-15 min or until crisp.
Enjoy with some salsa, dip or a nice bowl of soup.
what a fab idea

ReplyDeleteThey look delicious and perfect with a hummus or other dip - of course just by themselves would be equally good.
ReplyDeleteYou are really creative Jenn! Sounds really delicious with garlic.
ReplyDeleteAnd they always taste much better than what you buy in the store. Less salt, more tortilla. We love cumin and chili powder to add a little spice!
ReplyDeleteGreat idea... I always seem to have an assortment of leftover tortillas lying around. I will have to give these a try! I saw a roasted red pepper dip a while back that would be delicious with these... if I can only remember where I saw it. :)
ReplyDeletewhat a great idea - and baked is cool too for more than health reasons - they stay flat!
ReplyDeleteThose are definitely leftovers that I would be happy to eat!

I love the way you mix your metaphors. Italian flavors, on a Mexican staple, served in a Chinese "to go" food carton! GREG
ReplyDeleteRoasted garlic? Homemade chips? This is snacks done right! Bookmarked!
ReplyDeleteRobert-Gilles: LOL
ReplyDeleteLori: Thank you.
Greg: I do love mixing it up. =)
haleysuzanne: Sweet!
What a great idea! I can imagine eating them with curry now.
ReplyDeleteSmart! Did you use flour or corn? I suppose both would work--but I'm curious as to whether or not corn gets crispy enough in the oven...
ReplyDeleteNicely done...these look so tasty. I don't think I could eat just a few.
ReplyDeletepigpigscorner: Mmmm...Curry.
ReplyDeleteTavoLini: I used wheat. Corn would work well too. They'll definitely crisp up.
Pam: you'll be grabbing handfuls of them.
Nice idea, I like it. I like it a lot!
ReplyDeleteSounds great with garlic. Wish I had some extra tortillas sitting around right now!
ReplyDeleteDaily Spud: Thanks.
ReplyDeleteLisaiscooking: Why not just buy some more? =)
Late as usual! All of these are gone, I'm sure. Now I have to rummage in the refrigerator for my leftover tortillas. This is too good to pass up!
ReplyDeleteTangled Noodle: The party is always rolling.
ReplyDeleteI am a big texture eater so these look delicious!
ReplyDeleteBread and Jam: They are very delish!
ReplyDeleteWow Jenn! another fab idea! We always throw away the last few pieces of tortilla because they go bad....
ReplyDeleteI'll try this one out the next time we have some left over...
Zriz: Thank. This is a great way to not let leftover go to waste.
ReplyDeleteI love this idea because currently, as we speak, I have NO bread in the house... I just so happened to have tortillas though...Ironically Enough..lol... I just made some tomato and spinach pasta with pork tenderloin... And I'm about to use your recipe for my garlic bread substitute! THANKS FOR PUTTING YOUR IDEA ONLINE because I can't LIVE WITHOUT GARLIC BREAD SOMETHING AND PASTA!!! LOL... ;-)
ReplyDeleteI made these to go with a Mexican shrimp soup I prepared....they were great and easy. Didn't change a thing. Next time will make a double batch.
