Lettuce Bundles



Since most of the ingredients in the fridge were for my Christmas meal. It was sort of slim pickings. I was interested in making some kind of wrap, but I didn't have any flatbread or tortillas. So I just chopped up some bell peppers, tomato and added some whole corn kernels. I did feel that something was missing from this little mix. I sliced up a couple Chinese sausage links and mushrooms and sauteed them before mixing them into the chopped veggies.

I took one last look in my fridge and say a head or lettuce. Eureka!!!! Lettuce wraps!!!! Well, that solves my problem. I carefully  "tried" to unravel the leaves. I managed to get 4 good ones. There were several where I tore them to pieces. Stuff the mixture into the "cup" part and wrapped it up like a spring roll. Healthy and deliciousness.

Make 4-5 wraps.


Lettuce Bundles
3 Bell Peppers finely - chopped
1 c corn
 1 garlic clove
2 ripe tomatoes - finely chopped
8 oz mushrooms - sliced
2 chinese sausage links - sliced
2 Tbsp balsamic vinegar
salt
pepper
4 large lettuce leaves iceberg or romaine

In a bowl, combine the bell peppers, tomato and corn together. Season with a little pepper.

Saute the garlic in a tiny drizzle of oil. add the mushroom and chinese sausage and balsamic vinegar. Cook until the mushrooms are slightly darker in color and have reduced in size season with a little salt and pepper. Add to the bell pepper mixture.

Combine the mixture well.

Take a large lettuce leaf and scoop a large helping of the mushroom mixture onto the round stem area. Carefully wrap the leaves like a spring roll. Roll up the stem end first, then bring in the side and finish rolling.

I love wrapping stuff in lettuce leaves. I enjoy the slight crunch factor. The stuffing sounds like a perfect filling! Tasty!

Yum, yum, yum! These look soo good - and I love that they're also pretty darn healthy! (Cause I think most of us need that after the last 2 weeks of gorging... um, I mean, celebrating the holidays)

I remember when the Atkins diet was all the rage, lettuce wraps were super popular. This is a great recipe for people looking to start eating healthy in 2010 :D
