Miso Ginger Grilled Eggplant
Eggplants. What else can I say about them except that I love to eat them. I had had two in the fridge. I'm still trying to get out of my post-holiday cooking slump. I want to cook something, but I can't think of anything to cook. Why -oh-why? I seriously had ho idea what I wanted to make with these delicious plump eggplants. So I just went the grilled route. Pulled out ol' Georgie for the heck of it. I paired it with a miso ginger glaze. Oh, So good and delicious. Nice and gingery just how I like it. Yum!! Look at those awesome grill marks. I had these with a couple of popovers.
Serves 2-3
Miso Ginger Glazed Grilled Eggplant
2 medium eggplants
Miso Ginger Glaze
2 Tbsp white miso
1/2 Tbsp grated ginger
1/3 c water
1 tsp granulated sugar
1 tsp rice wine vinegar
Prepare your grill.
Combine all the ingredients of the glaze. Be sure all the sugar has dissolved. Set aside.
Slice the eggplants lengthwise about 1/2-inch thick. When the grill is ready. Place the eggplants down. Baste the top side. Flip after 3-5 minutes. (depending on heat) You'd want some good grill marks. Baste the other side and grill for another 2 minutes.
Rem0ove from the grill. Serve warm.

Eggplant is one of a few vegs that I still haven't gotten right: it always comes out unpalatably mushy. Your grilled versions look so good, though! Are those your cheese popovers paired with them? Mmmm . . .
I wish I were going home to those eggplants for dinner. Amazing!
Miso and eggplant, that sounds really delicious Jenn. I love the idea of grilling it too.
I love grilled eggplant, but I never thought to use the George for this, great idea.

Eggplant, huh? Well, I'd try it. It sure looks good. ;)
Yeah, those grill marks are wicked good, especially from a Foreman.
i just had eggplant parm for lunch, and i had an amazing eggplant with garlic sauce with dinner last night, but i NEVER make it at home. i wonder why that is, because apparently i do enjoy it.
Wow, miso and ginger with eggplants! That sounds great!
What brand of miso do you buy? I've been wanting to work with it, but am intimidated by the options!
i rarely have eggplant, i just don't think to get them, but i really need to try these, they look fantastic!
Good idea! I always get excited when I buy eggplant, but 9 times out of 10 just make a ratatouille with it. I haven't tried it on its own...
You are so great with eggplant! It always looks fantastic!
oh wow love this and the way you used miso yummy
Miso and eggplant is a wonderful combination. GREG
This looks tasty. Love the miso and ginger flavors with the eggplant.
My hubby always grills eggplant for me in the warmer months. Ill have to try and remember this flavoring for when he grills next. Sounds fantastic!!!
More eggplant! Also loving the eggplant. This is a classic that never disappoints at restaurants. It's more fun to make it at home.
Thanks for this post, pretty effective piece of writing.
