Salad-licious
. I'm not afraid to say it. I love salads. I used to fall under the category "I loathe salads," but over the years, it has won me over.
Makes roughly 1 cup
POM Ginger Vinaigrette
1/3 c POM juice
2 Tbsp Dijon Mustard
1 Tbsp Lemon juice
1 tsp fresh ginger - minced
1 tsp balsamic vinegar
2 Tbsp Olive oil
salt and pepper to taste
Combine All ingredients together and season lightly with some salt and pepper. It should be a deep red-ish in color.
Thats a super salad :)

ReplyDeleteI love salad too, but it never keeps me full long enough. Even when I add protein I still get hungry. I guess it's my bodies way of telling me I'm a carnivore...haha. Anyway onto this vinaigrette. It looks awesome. I love all the flavors...yum!
ReplyDeleteNice. I didn't like salad for a long time myself, but I've become quite a fan. Mostly because I found that if I eat them sometimes instead of cookies and beef I can actually lose weight. Heh.
